I also refer to these tasty little morsels as ‘lazy dessert’. I know, right? IMAGINATIVE.
I made them this past week because I had a couple of leftover bananas that I didn’t know what to do with. You know, just sitting there on the counter. Getting all ripe and shit. And I can’t handle the idea of food going to waste, especially healthy tasty fresh food. It sends me into an anxiety spiral that gets worse and worse until I can either save the day with a fun new recipe, or until I end up weeping silently, defeated, over the garbage can. YOU COULD HAVE BECOME SO MUCH MORE THAN A WASTED $1.52!
But then I try to watch what I say, we all know bananas bruise easily (har har har).
Even if you don’t like bananas very much, I encourage you to give them another chance when they’re frozen like this. When fully frozen, they have an awesome texture (almost like ice cream) and the ordinarily strong banana taste is less so.
The kid likes them, which is saying a lot because he’s not the kind of person that says, “Mom, I’m hungry. I’m gonna look past the see-through cookie jar on the counter and the half-full bucket of Halloween candy that I know you hid in the cabinet way up high behind some crap, and eat this here healthy thing” at snack time. If masking the healthy with a little chocolate gets him to eat a fruit, I can’t really complain.
So, on to the recipe!
- 2 ripe bananas
- 3/4 Cup chocolate chips (I used semi-sweet)
- 3-4 whole cinnamon graham crackers
- 1/4 Cup milk
Peel and slice bananas into 1/2 in. thick pieces. Place in single layer on a plate lined with foil or wax paper. Set aside.
In a microwave safe bowl, add chocolate chips and milk. Microwave on high for 30 second intervals, stirring to combine after each interval. When completely melted, use a teaspoon to put small dollops on top of each banana slice. Spread the dollop around to cover the top.
Break off small pieces of graham cracker roughly the same size as the banana slices and gently press down into the chocolate. No need to get fancy here, unless you really want to.
Put the plate in the freezer for at least 2 hours. I know it will be tempting to eat them before, but they’re best when they’re completely frozen! After that, you can take what’s left, put them in a resealable bag, and return to the freezer for an easy snack/dessert.
